orzo and green herbs

8 cups water
7 oz. orzo (small, rice-shaped pasta)
1 cup finely chopped mixed fresh herbs (thyme, chives, basil, sage, oregano, parsley, marjoram, or tarragon)
2 teaspoons extra virgin olive oil
1/2 teaspoon salt
Fresh ground pepper to taste

Boil the water in a large, covered pot. Add the orzo and cook for 7 minutes until al dente. Mix all other ingredients in a large mixing bowl. Add drained pasta, toss well, and serve immediately. Makes 4 servings.
